You may apply for a single entry tourist visa before traveling to Thailand. Then before you leave for Cambodia, you must apply for a re-entry permit so that you can use the same visa on your next entry to Thailand without this being cancelled.
The single re-entry permit is 1,000THB. The visa fee for the single entry tourist visa will depend on the Thai embassy or consulate where you apply.
As a German I got a free 30-day entry visa when I went to Bangkok at the 22nd of October for a (4-day) weekend trip. On the visa stamp it says that it is only valid until the 20th of November. Now, I’m planning to go back to Thailand until the end of November.

There is no longer a limit on the number of days that you can stay within a 6-month period. As long as you have the appropriate visa or stamp, you can stay in Thailand. However, visa-free entry available to certain nationalities like yourself may be limited depending on the discretion of the immigration officer. In some cases, an officer may turn you away if you have had 4 consecutive 30-day visa-free entries to Thailand.

The 30-day extension will be added on top of the 60-day tourist visa that you currently hold. For the month of November, there are no holidays according to the calendar issued by the Thai government.
